Katchkie Farm Spinach and Strawberry Salad

Ingredients (serves 4):
1 tbsp champagne or white wine vinegar
1 tbsp raspberry vinegar
1 tsp Dijon mustard
1/2 shallot, finely chopped
Salt and freshly ground pepper
2 tbsp extra-virgin olive oil
1/2 pound spinach, stems trimmed and washed
1 cup thinly sliced strawberries
1/3 cup sliced almonds, toasted
2 oz feta cheese, crumbled

1) Whisk the vinegar, mustard, and shallot together in a large serving bowl. Add salt and pepper to taste. Drizzle in olive oil while whisking. 
2) Add the spinach, strawberries, almonds, and feta cheese to the vinaigrette, toss to combine, and serve.
