Dragon Tongue Roma Beans

Dragon Tongue Roma Beans can be eaten at various stages of maturity. Eaten young, the beans have a warm, cream color with variegated purple stripes and about 6 inches in length. They can be eaten raw or cooked and are firm, nutty, starchy, and sweet. Allowed to mature, the beans become red and the seeds can be shelled and eaten as is or dried.

Preparation: Young, tender pods can be eaten raw in salads or as a crudité; simmered or steamed then shocked; or pickled. They can also be stir-fried or braised. Mature, dried beans should be cooked and can be prepared as other dried beans.

Taste: Nutty, starchy, sweet.
