Yellow Moonbeam Watermelon from Meadowlark Hearth

About the Yellow Moonbeam Watermelon

A beautiful, 5-8 pound, striped watermelon with sweet, flavorful yellow flesh. Grown in the north it was bred by Alan Kapular of Peace Seeds.

Storage

Whole watermelon can be stored on the counter, out of sunlight, until ripe for about one to two weeks. If your watermelon is ripe, store in the refrigerator for up to two to three weeks.

Preparation

Wash and scrub the outside of the watermelon. Slice in half, then quarters, and then cut into wedges or chunks. Serve at room temperature or chill, tightly covered, in the refrigerator. You can also blend it into a juice (check out a recipe for a Watermelon Cucumber Tonic here) and stored, tightly covered, in the refrigerator for up to four days. The juice may separate, so stir before serving.

Watermelon chunks can also be frozen - place in a single layer on a sheet pan and put in freezer until solid. Transfer to an airtight container and use in place of ice cubes in drinks or smoothies.

Nutrition Information

Although watermelon is low in fat and calories and is a good source of vitamins A and C, it is somewhat high in sugar. It is also rich in lycopene, which may aid in lowering blood pressure.
