2 kohlrabi, peeled
Then cut into thin discs and then slice the discs into sticks. (Aim for 1/8-1/4" thick)
1 bunch scallions, chopped bulbs and tops
1/2 cup chopped fresh parsley
1 chopped apple or 2 grated carrots optional
Or try some capers
2/3 cups mayo
1/2 cup red wine vinegar
1 tablespoons mustard (any kind - a big flavor one is fine)
2 tablespoons fennel seeds
2 tablespoons sugar
Salt and pepper to taste
1) Combine the veggie ingredients,
2) Mix the dressing well,
3) Add together!
Improves after a few hours and great the next day!!!
